Lamington vs the New Zealand Wellington

Actually people did believe the April Fool prank about the NZ Wellington. There were a number of contributors both at the time of publication of the prank and those who stumbled upon it subsequently come and edit the lamington article in good faith that the lamington had NZ origins citing the prank article. This is why we added mention of the prank in the article itself to try to stop these edits (and it seems to be effective). But you were correct that the citation did not support the claim that people believed it, and I have modified it so it simply says there was a prank and not that people believed it.
